1.00 small Red onion -- chopped
1.00 large Eggplant == peeled and
3.00 tablespoon Oregano
0.50 cup Mushrooms -- chopped - or
0.25 cup Vinegar

2.00 cup Dry pasta shells
0.25 cup Red wine
0.33 cup Water
0.50 teaspoon Salt -- (or less)
Cubed
1.00 each Green pepper -- chopped
Ground pepper
2.00 tablespoon Garlic -- minced
10.00 oz Tomato sauce
0.50 cup Chives -- chopped

Preparation

Cook pasta shells. While cooking pasta heat a large skillet with the
water and vinegar. When getting hot add the cubed eggplant, onion,
chives, garlic, green peppers, and mushrooms. Saute till soft When
done add to the pasta along with the tomato sauce, oregano, salt,
pepper and red wine. Stir and heat gently (on low).
