Ingredients
1.00 each Garlic clove; minced
1.00 each Shallot; minced
2.00 tablespoon Butter
0.25 cup Oil; for frying
1.00 each Scallion, with top; minced
1.00 each Scotch Bonnet chile; minced
2.00 lb Goat or mutton; in 1" cubes
2.00 large Tomato; chopped
2.50 cup ;Water
2.00 medium Onion; chopped
Salt & pepper; to taste
3.00 tablespoon Madras-type curry powder

Preparation

Place the meat in a large bowl and add the garlic, tomatoes, onions,
scallion, shallot, chile, curry powder, salt and pepper. Mix them
together well and allow the meat to marinate for at least 30 minutes.

Heat the butter and oil in a large skillet. Remove the meat from the
marinade, reserving the marinade, and brown the cubes in the skillet.
Add the marinade, then the water. Cover and cook over medium heat for
1 1/4 hours, or until the meat is tender. Taste for seasoning and
serve over white rice.
