Bourride A La Toulonaise

Ingredients
2.00 tablespoon Arrowroot, dissolved in
6.00 each Egg yolks
all of the ingredients from the
2.00 medium Tomatoes, peeled, seeded
1.00 medium Lemon
2.50 lb Fish, assorted, whole if
0.50 teaspoon Thyme
1.00 medium Onion, red, chopped
1.00 qt Stock, fish
1.00 qt Water, boiling OR
8.00 each Croutons, garlic OR
0.50 cup Fennel, chopped
8.00 each Mussels
0.25 lb Mushrooms, stems removed
1.00 teaspoon Water
4.00 each Garlic, cloves
2.00 medium Potatoes, quartered
2.00 tablespoon Parsley
1.00 each Leek, chopped
1.00 each Bay leaf
8.00 each Toasts, garlic
8.00 each Crawfish

Preparation

large kettle. Over heat, pour on boiling water or stock. Add
mushrooms, cover and cook for 20 minutes.

Strain the liquid into another pan and boil to reduce. Add a bit
of the hot liquid to the beaten yolks, whisking constantly. Add more
liquid until the yolk mixture is hot.

Add dissolved arrowroot and egg mixture to the pot of broth and
heat, but do not allow to boil.

Place fish and shellfish on a platter and pour the sauce over
them.

Garnish with croutons or toasts.
