Fluffy Light Meat Loaf
Make 4 servings
3.00 tablespoon Finely chopped green pepper Or celery
1.00 tablespoon Freshly chopped parsley
Chili sauce
1.00 each Egg, lightly beaten
0.25 teaspoon Finely chopped garlic
0.50 cup Oatmeal
1.00 lb Ground beef
1.00 small Onion, finely chopped
2.00 tablespoon Bran
2.00 tablespoon Wheat germ
0.25 teaspoon Freshly ground pepper
1.00 can (6 oz.) tomato paste
0.50 teaspoon Salt
Directions

Preheat oven to 350 degrees.Combine all loaf ingredients, using your
hands.Form into loaf and place in 9 X 5 X 3" loaf pan,cover with
layer of chili sauce (or ketchup if desired), bake 50 minutes to 1
hour.(Do not overbake,since part of the secret of fluffiness is
shorter cooking time.)Serve the meat loaf sliced and hot.Serves 4.

Variation: Half ground veal and half ground beef can be used for the
meat loaf - lower in calories.
